Operation Process
The automatic transfer machine transports ingredients along the track, handling both feeding and unloading. First, the ingredients are pre-cooked in clear water in a smart braising pot to remove blood and foam. Then, they are transferred to a pot with seasoning broth for high-temperature cooking. After completing the braising process, the ingredients are moved to a cooler where they undergo rapid cooling in a sterile, oxygen-free environment.
